What is the flavor of mate?
Its taste is bitter, mainly due to the tannins present in yerba leaves, but also thanks to its strong antioxidant potential due to a high concentration of polyphenols. Some prefer to sweeten mate with sugar, sweetener, honey, stevia, etc., to mask its bitterness. But, as I always tell my customers: mate is a drink with a unique taste. Take sugar-free coffee, for example; it probably wouldn't be enjoyable for someone who has never tasted coffee before. However, once we integrate it into our habits, this bitterness becomes our best ally.
What do I need to prepare mate?

Infusing mate is an art that requires attention and care to fully appreciate its flavors. Here are the steps to prepare a perfect brew:
- Choose the container: Use a traditional gourd for an authentic experience.
- Prepare the yerba mate: Fill the gourd to about two-thirds of its capacity with yerba mate.
- Tilt the gourd: Tilt the gourd so that the yerba mate pools on one side, creating a slope.
- Add cold water: Gently pour cold water onto the side less filled with yerba to allow the herb to gradually moisten. This helps preserve flavors and nutrients.
- Insert the bombilla: Gently place the bombilla (filter straw) in the lower part of the yerba mate.
- Pour hot water: Use water around 70-80°C. Slowly pour the hot water over the same part so as not to burn the yerba mate and thus keep its taste intact.
- Infuse and enjoy: Let it infuse for a few minutes, then enjoy. You can reinfuse several times, adding hot water as you go.
